Housed in an 1890s cottage just off Pearl Street in Boulder, the Scandinavian-style fresh baked goods at Süti & Co. (sutiandco.com) are made daily on-site with locally sourced seasonal ingredients. The nostalgic atmosphere and tasty comfort treats are inspired by Andrea Uzarowski’s Danish roots—specifically her family’s traditional shortbread recipe. (Süti is a style of Danish shortbread.) Choose from a half dozen shortbread cookies, strudels and Swedish cardamom buns paired with espresso drinks from Boxcar Coffee roasted in Boulder. Relax alfresco on the patio— which feels straight out of a European fairy tale—or sit inside to savor the sweet smells of the day’s creations.
Owner and chief baker at Mom’s Baking Company (momsbakingcompany.com), Ema Landis has been defying the challenge of high-altitude baking in Breckenridge since the bakery opened in 2016. Originally from the Czech Republic, she attended culinary school in Europe and came to the U.S. in 1996 as sous chef for the Czech Olympic team in Atlanta. At Mom’s, Landis bakes from scratch every morning, using her mother’s secret recipes, including for her signature Baked Tea. Guests can order from a regularly rotating menu of danishes, croissants, cronuts and Czech-inspired treats like věneček—a wreath-shaped puff pastry with cream filling.
Matt Quinlisk began his Colorado baking journey as a pastry chef at award-winning bakery Moxie Bread Co. in Louisville, where he quickly developed an appreciation for locally sourced and milled Rocky Mountain grains. He branched out with a solo venture selling wholesale baked goods to coffee shops and farmers markets. His creations drew enough fans for him to invest in a stand-alone, brick-and-mortar location—Hearth (hearthdenver.com), located in Denver’s bustling RiNo neighborhood. Here, visitors can indulge in artisanal pastries and fresh-baked bread, served with coffee from Denver’s Tablón Coffee Roasters. Don’t miss the seasonal sweet and savory Danish specialties, like plum and caramel in summer and heartier choices like potato and chives in autumn.
