FOUR SEASONS HOTEL DENVER REOPENS WITH A REIMAGINED STEAKHOUSE.

FOR SEVEN MONTHS, the shades were drawn as the acclaimed Four Seasons Hotel Denver underwent a top-to-bottom renovation. When the hotel’s gathering spots reopened on May 31, it was apparent that much more than new paint and drapes were involved. The refurbished spaces were literally opened up during the renovation, lending a light and airy feeling with an eye-catching design.
“As you come into the EDGE, there’s a rare-wine cabinet on your right and an aged meat cabinet on the left, stocked with everything from New York strips to wagyu beef to a whole suckling pig,” says Jessica Biederman, a South Carolina native and the EDGE’s new chef. “We looked at what we could do to be a little different from other steakhouses.” Cuts of beef hang inside the locker, some with name tags on them. As part of a new program, customers can buy their own short loin and have the restaurant age it on-site. When you come in for dinner, enjoy a cut off of your own personal short loin. “You can taste it aged at seven days, 14 days and then 21 days,” she says.
The upgraded restaurant features three private dining rooms, most notably The Butcher’s Block, a glass-walled dining space next to the kitchen that seats up to 10 guests, allowing diners to take in a culinary show while interacting with chefs.
Two new lounges join the original and ever-popular EDGE bar. One sits inside the Four Seasons’ hotel lobby; the other, situated in the restaurant proper, features a glass-encased, Japanese-inspired raw bar. The bar menu transforms popular dishes into small shareable bites like ahi poke toast or crispy arancini with whipped ricotta, tomato marmalade and Italian sausage.
As downtown reawakens post-pandemic, the reimagined EDGE restaurant and lounges are poised to once again be the place to meet and eat before and after Denver’s arts, entertainment and sporting events a few blocks away. 1111 14th St., Denver, 303.389.3050, edgerestaurantdenver.com
