WHEN GUY FIERI CAME TO DENVER TO SAMPLE the fare from Just Be Kitchen for his Food Network Diners, Drive-Ins and Dives, he declared the chicken and dumpling dish “legit.” “I’ll have it by the quart,” said the spiky-haired gourmand. What’s surprising is that Just Be Kitchen serves fare completely free of gluten, refined sugars, dairy, soy, corn, peanuts and seed oils. But wait, there’s more. The menu is 99% grain, dairy and legume-free, making Just Be Kitchen a must-try for folks with allergies or who are following Paleo, keto and Whole30 diets.

Founder Jennifer Peters miraculously conjures delicious comfort food without the standard ingredients—and without compromising taste. She got her start selling her homemade products at farmer’s markets before opening a brick-and-mortar location in Denver’s LoHi neighborhood in 2017.
“We’re passionate about offering comfort food to health-conscious individuals and families, high-performance athletes and those living with food allergies,” she says. “We believe we’re changing people’s relationship with food by showing that eating well doesn’t have to be about sacrifice.”
At Just Be’s three locations (two in Denver and a third in Boulder that opened in late 2023), diners will find housemade tortillas and French toast sliders with almond flour and toasted coconut. The dumplings in the chicken dish that Fieri raved about are made from cassava flour. To satisfy your sweet tooth, look for brownies, cupcakes and cinnamon rolls under the heading “Just Be Naughty.”
