MY LONDON MULE arrives with much fanfare at our private circular booth in the bar at Elway’s Downtown inside The Ritz-Carlton, Denver (ritzcarlton.com/denver). Made with Empress 1908 gin infused with butterfly pea blossom, ginger beer and freshly squeezed lime, the cocktail is a striking shade of lavender. The yellow, red and purple flowers evoke the signature colors of Meow Wolf ’s Convergence Station, the immersive art experience that’s taken Denver by cosmic storm.
Our server pulls the trigger on a smoke gun, and a giant milky-white bubble floats toward the highball. On impact, it explodes into a cloud of oak- and berry-infused vapor. It is the perfect prelude to a trip to Convergence Station.
