Enjoy Elevated Libations at Vail Valley's Only Rooftop Bar

THE VAIL VALLEY HAS PLENTY OF LOUNGES WITH SPEAKEASY VIBES, BUT THIS NEW VENUE IS THE AREA’S ONLY ROOFTOP BAR.

JUST IN TIME FOR SUMMER SIPPING, The Westin Riverfront Resort & Spa Avon (westinriverfront.com) opened up the Vail Valley’s only rooftop bar. From its fifth-story perch, One Rooftop Bar (onerooftopbar.com) in Riverfront Village captures sweeping views of Beaver Creek’s slopes, Vail’s Game Creek Bowl and the Eagle River. One Rooftop Bar is a cozy space imagined by Boulder-based interior design firm The Ranch House. The space is wrapped with floor-to-ceiling view-finding windows, which means you can enjoy happy hour or a nightcap any time of the year—even if it’s storming outside. And in summer, the accordion windows fold back for an elevated open-air experience.

Mixologist Matthew Hallas, who’d been crafting cocktails at Denver’s Death & Co, brings a relaxed, inviting energy to One Rooftop’s drink menu. Look for botanical house infusions and inventive drinks like the shooting star spritz, a refreshing blend of Insólito Reposado, Aperol, bubbles and citrus garnished with edible luster dust.

The menu also has crave-worthy bites from executive chef Angel Munoz, who also oversees The Westin’s Stoke & Rye and the hotel’s Lookout lobby bar. For One Rooftop, Munoz curated palate pleasers that celebrate the flavors of the Rocky Mountain region. Designed for grazing and sharing, Nordic-style small plates include fog goat cheese with fig smear, pickled onions, arugula and dill served with a sourdough baguette.

The new bar is part of a massive renovation that included a refresh of The Westin’s 230 guest rooms, now with new mountain modern furniture, flooring, artwork, lighting and Next Generation Heavenly Beds.
