THE REMEDY BAR at Four Seasons Resort and Residences Vail (fourseasons.com/vail) is a popular après gathering space and focal point in the hotel. But just down the hall on the main level is a hidden gem that often goes undetected. The design and menu of Speyside Café are an homage to the Highlands region in Scotland where The Macallan is distilled. The cafe represents a bold makeover of a space that once served as a basic hotel coffee shop. You can still fuel up here in the morning—now with an elevated selection of coffees, from lattes to espresso tonics—but Speyside also has an extensive selection of The Macallan single-malt whiskies as well as rare cask offerings. All day long, you can find whisky cocktails, neat drams and Scotch-inspired sweets—from sticky toffee pudding to bacon whisky brownies. Speyside offers an ideal location to relax, unwind and raise a glass of single malt.
