WITH SCULPTURES AND PAINTINGS by Mexican artists like Manuel Felguerez and Victor Chaca tucked in every corner of The Sebastian Vail (thesebastianvail.com), it’s no surprise that the cocktail menu at The Gambit Bar, a newly renovated gathering spot situated off the hotel’s lobby, has an artful drink collection.

Designed by beverage director Garrett Cosgrove and Miami-based Unfiltered Hospitality, The Gambit cocktail lineup interprets classic cocktails with a Colorado twist. Served atop a green marble bar, the Carrington Club is a delectable riff on the pre-Prohibition Clover Club cocktail. The Gambit’s iteration has Lunazul blanco tequila, Pasubio vino amaro from Italy’s Dolomites, salt-preserved blackberries and a hint of citrus. It comes in a martini glass with a rice paper replica of artwork by world-renowned painter and sculptor Leonora Carrington floating on top. While the surreal artwork magically disolves in time to start sipping, you can peruse Carrington’s actual sculptures and paintings throughout the hotel.
